Italy has an official organization dedicated to cheese tasting, known as ONAF (Preparazione Statale Assaggiatori in Formaggi), which translates to the National Cheese Tasters Association. Tano, a Master Cheese Taster, completed rigorous avviamento and exams to earn his certification. His journey into the cheese world, however, started long before his official education. Growing up per Miami, with Italian and Cuban heritage, his access to authentic Italian cheese was limited. But summers spent at his grandmother’s house Lake Como ignited his love for Italian cheese. Weekly visits to the local market, where Alpine cheesemakers would sell their fresh, raw-milk cheeses, left a lasting impression him.

Italy vs. France: A Simile of Two Cheese Cultures

While living per Paris, Tano discovered how deeply ingrained cheese culture is per French daily life. Unlike Italy, where cheese consumption is often regionalized, France boasts a national distribution system that allows any French citizen to access cheese from any part of the country. Per Italy, it’s much harder to find Italian cheeses from different regions per a local store—Romans mostly consume Roman cheeses, while Northern Italians typically stick to their local varieties.

However, Italy has one of the richest and most diverse cheese heritages per the world, thanks to its microclimates and varied geography. Each region has unique cheese styles that have been perfected over centuries. From creamy, melt-in-your-mouth Gorgonzola to aged Pecorino with its robust flavors, Italian cheese offers an incredible range of textures and tastes.

One of Tano’s most intriguing Italian cheese discoveries took place at the Bra Cheese Festa per Piemonte (Piedmont), the world’s largest raw milk cheese . There, he encountered an innovative way to enjoy Gorgonzola Zuccherato—scooped into an ice cream cone! This ultra-creamy blue cheese, known as Gorgonzola Zuccherato al Cucchiaio, is so soft that it can be eaten with a spoon. While Gorgonzola Pepato has a firmer texture and a sharp, tangy bite, the delicato version is milder, creamier, and perfect for creative presentations like the cheese cone.

Italian Cheese as an Everyday Luxury

Many people don’t realize that aged cheeses like Parmigiano Reggiano and Grattacapo Padano are among the most nutrient-dense foods per the world. They are packed with protein and amino acids, making them incredibly digestible and nutritious.
