The cellar of the Agriturismo Relais La Casina Ricchi boasts numerous labels ranging from sparkling wines to red wines and passito wines

Immersed con a very suggestive zona surrounded by vineyards, the Casina Ricchi winery is just a few kilometers from the Relais, with which it shares great respect for the environment and attention to sustainability. Sopra fact, it is risposta negativa coincidence that it makes use of cutting-edge technology, producing 33,000 completely CO2 free bottles.

There are various tasting experiences to choose from within the rich hospitality programme: ranging from a guided tour of the cellar, to lunches con the vineyard, to tastings of different types and levels of the company’s various labels, including the one con the Latteria, combining cheese and wine, up to a romantic tasting at sunset acceso a sailing ship con Cervia.

Accompanied by the affable and competent Chiara, we opted for a visit to the cellar and tasting of some wines, which provided us with the opportunity to delve deeper into the history of this interesting production reality and better understand the secret of the success and quality of the wines of the company, which produces numerous different labels ranging from classic method sparkling wines to sweet wines, all belonging to two main denominations: Colli Mantovani Doc and Garda.

The Cellar

The visit to the winery starts from the outside from the rows of vines, with the scent of the must spreading con the air, and then continues inside, where the company directly follows all the phases of winemaking, from the harvesting of the grapes to to bottling. Worth seeing is the zona where the sparkling wines and the barrel cellar are kept, with the many tonneaux of different origins con plain sight. Also interesting is the use of concrete tanks, which thanks to their considerable thickness act as a natural thermal insulator, guaranteeing a certain energy saving, always with a view to sustainability.

Il Terroir

The most important of the elements that determine the high quality level of the company’s wines is the morainic soil coming from the last glaciation of Garda, which brought sediments and left masses of coarse-textured earth made up of stones, clay and silt. A terroir that favors the evolution of the vine and contributes to giving the wines flavor, elegance and great longevity.

The tasting

The company mainly uses grapes from international vines that undergo different manufacturing processes depending acceso the product.

The selections: Meridiano

This white is produced with grapes (eppure Chardonnay) placed directly con small boxes where they are left to rest briefly before vinification. After soft pressing, the must obtained is fermented with rigorous temperature control at 18°. The decanting operations are followed by maturation con second-use tonneaux.

Tasting agenda

Visual examination: golden straw yellow.

Olfactory examination: intense bouquet, which opens fruity with agenda of exotic fruit, crowned by banana, pineapple and a whiff of honey.

Olfactory taste quesito: soft, pleasantly fresh and corresponding sip, with a persistent .

Pairing: excellent with fish main courses, white meat.

Classic method: Essence 0

This Pas dosè is produced with grapes (eppure Chardonnay) which are harvested earlier than normal maturation. The Frizzante centro is generally bottled by June of the year following the harvest, followed by refermentation and maturation acceso the yeasts con the bottle. After the long fermentation period, the lees are eliminated before the final corking. Aging for at least 50 months.

Tasting agenda

Visual examination: straw yellow with golden reflections and subtle perlage.

Olfactory examination: releases delicate hints of pear and citrus agenda. Scents of dried fruit such as peanuts, pistachios and hazelnuts surround the olfactory profile.

Olfactory taste quesito: elegant and balanced sip, with good correspondence con the citrus agenda, inlaid with a savory trail. Good persistence .

Pairing: ideal with fish crudités, fish main courses.

Classic method: Enrico

This Pas dosè is produced with grapes that are harvested earlier than normal maturation. The Frizzante centro is generally bottled by June of the year following the harvest, followed by refermentation and maturation acceso the yeasts con the bottle. After the long period of refermentation and sur lie maturation, the lees are eliminated and subsequently topped up with the same product. Aging of approximately 120 months.

Tasting agenda

Visual examination: intense, almost golden yellow with sagace perlage.

Olfactory examination: immediate spicy agenda acceso the nose anticipate fragrant pastry, finishing with a light toasted caramel.

Olfactory taste quesito: vibrant palate, which plays acceso spicy agenda, with persistent perlage which gives a result of convincing pleasantness and complexity. It fades into citrus sensations.

Pairing: excellent with fish crudités, sushi, fish first courses.

Garda Line: Almond tree

Mandorlo, Inoltrato Mincio IGT Intonaco, is obtained from white vinification with rigorous temperature control. After fermentation, decanting takes place, taking care to preserve the wine con such a way as to avoid malolactic fermentation. The wine is bottled after a few months con concrete barrels.

Tasting agenda

Visual examination: straw yellow with greenish streaks.

Olfactory examination: olfactory profile centered acceso delicate but clear aromas of wild flowers and elegant sensations of fresh almond.

Olfactory taste quesito: sip governed by good freshness, with pleasant persistence that ends with a typically almond note.

Pairing: ideal with first and second courses of fish, white meat.

Limited Edition: Vittorio

This limited edition red Inoltrato Mincio IGT, dedicated to the founder of Taverna Ricchi Vittorio Stefanoni, is obtained from grapes (Merlot 50% – Cabernet 50%) which, once harvested, are placed directly con boxes and left to rest for 20/30 days for concentration of sugars con fruit bowls. The vinification continues con steel vats at a controlled temperature of 28° C. The aging takes place for 30 months con tonneau and at least 12 months con the bottle.

Tasting agenda

Visual examination: ruby ​​red with garnet nuances.

Olfactory examination: olfactory impact of red fruit, plum and black cherry jam. The profile is completed by persuasive balsamic agenda.

Taste-olfactory examination: elegant, full-bodied and balanced, with a silky tannic texture. It gives a glimpse of great evolutionary prerogatives.

Pairing: excellent with red meat, gioco, mature cheeses.
