Aquila Sincero Bandita Trento DOC 2015 marks the return of one of Cesarini Sforza’s most identifying labels. A vintage that brings with it the memory of a dry and early vintage, free of phytosanitary problems: conditions that allowed the organic Chardonnay of Maso Sette Fontane – the cru grown acceso the Trentino pergolato at 500 meters above sea level, between Valdadige and Conca intorno a Cembra acceso pebbly dolomitic soils with a view of the Paganella, and which also manages to overlook the last edge of the Conca dei Laghi – to ripen with a slowness that favored finesse and balance con a clear, clean shape, almost sculpted by the altitude, despite the western exposure and the hot climate of 2015.
Andrea Buccella, oenologist and production dirigente, claims a vision that focuses acceso the “right” time, not the long one at all costs: “Who said that a reserve must remain acceso the yeasts for years and years? Every wine has its time. It is not the duration acceso the yeasts that defines the quality, but the balance that is created after disgorgement. Patience is needed, especially when the dosage is minimal as for the Aquila Sincero, to rediscover its natural harmony”.
An almost counter-current approach, which affirms the centrality of post-dégorgement balance rather than the fetishism of long pauses. The 2015 is an example of this: it is true that it spends 90 months acceso the lees, but at least a year of waiting after disgorgement which took place con January of this year, before the debut acceso the market con January 2026. All useful to rediscover a precision that Buccella considers essential.
