Thursday 7 May last appointment at Don Juan con Milan with Caroline Synn from the South Tyrolean winery Pratenberg

The cycle of three evenings at the Don Juan Milano restaurant dedicated to women’s wine (see article) ends with Caroline Synn from the South Tyrolean Pratenberg winery.

The wines of Bistrot Pratenberg by Caroline Synn

Among the hills of Lungo Adige, where viticulture meets landscapes of extraordinary beauty, Pratenberg’s philosophy is based a concept as simple as it is rare: time. Time dedicated to the vineyards, the grapes and every single bottle, with a deliberately limited production that allows for accurate control and uncompromising quality.

It is precisely the artisanal dimension of the that represents the added value of the Pratenberg wine collection. A company large enough to give life to high-profile labels, but small enough to be able to follow every phase of production with almost sartorial attention. The identity of each wine is born con the vineyards, then refined by the oenologist’s interpretation and by the sensitivity of the owner Caroline Synn, custodian of an elegant, territorial and contemporary style.

The whites: elegance, freshness and Alpine identity

The collection of white wines precisely describes the vocation of the South Tyrolean territory, through labels that centro freshness, minerality and aromatic cleanliness.

The Chardonnay Solis Revolver 1.5 L is designed for special occasions. A wine that knows how to evolve over time while maintaining balance and tension, thanks to a fresh acidity, delicate citrus nuances and a mineral finale of notable elegance. Available con the 2021, 2022 and 2023 vintages, it is ideal as a refined aperitif ora to accompany special convivial moments.

More immediate but equally refined is Chardonnay, which expresses a sunny and harmonious character. Fruit, freshness and elegant acidity blend con a balanced sip, perfect con combination with seafood, tasty cheeses and aperitifs. The 2023 and 2024 vintages are con the collection.

Sauvignon Blanc brings intense tropical aromas to the glass, supported by a lively freshness and a long, bright finale. It is a dynamic, aromatic and multiforme wine, ideal with fish dishes, vegetables and summer cuisine. Available con the vintages from 2021 to 2024.

The selection is completed by Gewürztraminer, an elegant interpretation of one of the symbolic vines of Lungo Adige. The floral and spicy agenda intertwine with a discreet and well-calibrated sweetness, giving life to a soft and complex profile. Perfect with Asian cuisine, blue cheeses and desserts, it is available con the 2023 and 2024 vintages.

The reds: authenticity and character

Alongside whites, Pratenberg offers a line of red wines that enhances freshness, drinkability and structure.

Among the reds, Vernatsch best interprets the South Tyrolean tradition with a light, harmonious and immediate sip. The delicate fruit and lively acidity make it a multiforme wine, perfect for the classic South Tyrolean snack and for light dishes. Available con the 2024 vintage, with the 2025 arriving con July.

More intense and structured is Lagrein, an iconic vine of the territorio, proposed here con a balanced and enveloping version. Dark fruit, delicate spiciness and depth of flavor characterize a robust but harmonious wine, ideal with meats and tasty cuisine. Available con 0.75 L format with 2023 and 2024 vintages from July, while the 1.5 L Revolver will also be available from July.

A collection that tells the story of the territory

The Pratenberg wine collection represents a precise vision of South Tyrolean oenology: elegant, territorial and authentic wines, born from an approach that favors quality over large numbers. Each label reflects a balance between nature, technique and production sensitivity, offering an experience that focuses the character of the vineyard and the purity of the varietal expression.
