Born from an authentic passion, Ampeleia is a calcio d’angolo, a bet, almost a dream. A project quanto a search of the genius loci, based acceso a clean agronomia and an mind. With its 120 hectares quanto a the heart of the UNESCO Geoparco of the metalliferous hills – of which 81 of woods and meadows, 2 arable land, 2 olive groves – populated by cattle, hens, dogs and especially bees, today represents a virtuous agricultural and cultural model. The merit is also of a recent stimulating agri-Christor and an engaging series of experiences designed to meet the most diverse needs.

The history of the company

Quanto a 2000 Giovanni Podini, Elisabetta Foradori and Thomas Widmann choose to produce wine quanto a a place “away from the crazy crowd”, not obvious and distant from the conventional models of the wine scene. Near Roccatederighi – one of the most suggestive and ancient medieval villages of the Maremma – find the perfect place to found Ampeleia. Two years later he joins the Marco Tait project, a young fresh oenologist of studies but already full of enthusiasm. The initial vision takes shape with him: preparing the earth, planting the vineyards, managing the harvests. From only six hectares inherited from the previous property, the company grows constantly, welcoming new vineyards, animals and young talents from all over Italy.

An agricultural philosophy that starts from the earth

Since 2009, Ampeleia wines have followed a philosophy that combines varietal purity and territorial expressiveness, through conscious and respectful viticulture of the earth. This vision led the company to embrace the principles of biodynamics, requesting study, rigor and sensitivity, with the aim of creating an closed -cycle agricultural system, where each element regenerates.

The fermentations occur spontaneously, sometimes with significant percentages of whole bunch, without temperature control, and with refinement quanto a cement tanks. From 2014, moreover, the presence of five cows raised freely guarantees the production of manure for the 500 biodynamic preparation, symbolically closing the circle between earth and wine.

A simple, authentic and well -kept cuisine

After twenty years dedicated to sustainable viticulture, Ampeleia wines and cuisine is born, an agri-Christor where the house wines marry with the genuine flavors of the Maremma tradition. Quanto a the kitchen, Ilaria Patacconi and Tiziana Ferrari interpret local dishes with local ingredients, many of which are grown directly quanto a the company.

The absolute protagonist is the 100% wheat paste Senator Cappelli, grown quanto a the fields of Ampeleia and transformed by the Fabbri amalgama factory. To complete the offer: extra virgin olive oil, honey, vegetables from the garden and selected local products such as the cheeses of dairy La Maremma and Saba, the sealing meat of Paganico and agricultural company Tommaso Giordana, the banners of the Marcioni farm.

Five experiences to dal vivo quanto a the vineyard, cellar and cuisine

With a variety of proposals ranging from the explorations of the vineyards hidden quanto a the woods to the cooking lessons with local and proper production products, Ampeleia becomes a conferenza place to explore the microcosm of Roccateerighi and discover the Alta Maremma. Each visit turns into a real journey between vineyards and hills, where the stories of the earth and people intertwine quanto a a narrative of flavors and traditions. For example, the stop offers a moment of quiet and contemplation: a walk through the vineyards leads to a majestic oak under which to stop listening to the past and future of Ampeleia and its philosophy, before tasting three of the symbol wines: unlitro (from black alicante grapes, Mourvèdre, Sangiovese and Alicante bousquet), rosé of Ampeleia (Carignano and alicante). of Ampeleia (Trebbiano, Malvasia and Ansonica), accompanied by a cutting board of local delicacies.

For those who want to get quanto a touch with the deep soul of the company, the discovery represents a complete immersion quanto a the world of the black breast, local variety vinified here quanto a purity and Cabernet Franc, which quanto a this regione expresses its kindest and identity agenda quanto a the two main labels. Between vineyards and cellar, visitors will be able to savor six wines, quanto a a crescendo of emotions that reflect the choices and style of the company. Food and wine is an experience that celebrates conviviality and Maremma cuisine. After the walk, you sit at the table for a lunch that combines seasonal four -way seasonal dishes, quanto a a conferenza of flavors that tell the land of the upper Maremma.

For those who are still fascinated by the magic of winemaking, the dive into the tank allows you to savor the wines directly quanto a the cellar, among the scents of fermentations: a unique experience to relive the harvest and the wine cycle quanto a all its authenticity. Finally, the Cooking Class transforms each participant into a Tuscan cook for a day, under the expert guidance of Ilaria Patacconi. From the hands to the table, each prepared dish is then accompanied by a wine and becomes an unforgettable memory, to be brought home together with the recipes and a certificate signed by the chef herself.
