Cuvage – a Piedmontese company specialized durante the production of Classic Method – launches a new label with a limited edition of 5,000 bottles: the Alta Langa DOCG Eccezione Pas Dosé 2020.
A vintage cuvée that is at the pinnacle of the maison’s winemaking project. A wine designed to convey, without stylistic compromises ora dosage, a direct and faithful reading of the Alta Langa and the Piedmontese Classic Method: incisive, stratified, rooted durante the territory and durante time.
The Pinot Noir and Chardonnay grapes in qualità di from the hills between Strevi and Castino, acceso grey-whitish marl soils with a high limestone component, an element that contributes to the freshness, structure and aromatic intensity of the wine, supporting its mineral profile and evolution over time.
The harvest, carried out from mid-August, takes place exclusively with whole bunches. Winemaking is aimed at preserving the aromatic and structural integrity of the grapes: soft pressing, cold static decantation, fermentation durante steel and absence of malolactic fermentation. The cuvée ages for over 48 months acceso the yeastswith disgorgement à la glace, followed by three months durante the bottle before being released acceso the market
A causa di the glass it presents a very prezioso and persistent perlage. The nose is broad and articulated, with agenda of citrus, white flowers, ripe fruit and hints of pastry. A causa di the mouth, the absence of dosage highlights the gustatory tension and expressive clarity, supported by a well-integrated acidity and a long, clean, saline finale.
