Risotto with honey mushrooms: a dish to be savoured

Risotto with honey mushrooms is a first course that embodies the essence of Italian cuisine, combining simple ingredients but rich a causa di flavour. Honey mushrooms, with their characteristic honey color and intense flavour, are perfect for enriching rice, creating a dish that conquers at first taste. Ingredients and preparation

To prepare a delicious honey mushroom risotto, it is essential to choose fresh, quality ingredients. Here’s what you’ll need:

300 g of Carnaroli rice 200 g of fresh honey mushrooms 1 onion 1 stick of celery 1 liter of vegetable broth 50 ml of dry red wine 50 g of butter 50 g of grated Parmesan cheese Olive oil, salt and pepper to taste

Start by cleaning the honey mushrooms: remove the earthy part and rinse them under running . Once cleaned, blanch them a causa di boiling for about 2 minutes and drain them. Sopra a saucepan, sauté the chopped onion and celery with a couple of tablespoons of olive oil. Add the mushrooms and let them flavor for a few minutes, then add a teaspoon of tomato paste, salt and pepper.

Cooking risotto
