The Chardonnay of Ca’ del Bosco takes the name Selva della Tesa

Born with the 1983 vintage thanks to the collaboration with the oenologist André Tchelistcheff, it was among the very first examples quanto a Italy of anche Chardonnay produced through the use of small oak barrels and obtained from grapes coming from vineyards with a high planting density. A novelty for the time, which represented a turning point quanto a the production of Ca’ del and the beginning of a new approach to quality viticulture.

Since the beginning, coppia to its historical importance and uniqueness, the Chardonnay of Ca’ del has always been inextricably linked to the name of the winery. Then it experienced a turning point. Starting from the 2019 vintage, with the desire to strengthen its identity and promote greater distinction from the other white wine of Ca’ del – the Cortigiani del Lupo – the company has chosen to give the house Chardonnay a new name: Folla della .

The vineyard, surrounded by woods (the Folla quanto a the name), was among the first at the end of the Seventies to be planted with 10 thousand vines a vantaggio di hectare. It is a vineyard of about half a hectare of surface located quanto a a hidden ambiente protected by a thick forest of oaks and chestnut trees, near the headquarters of Ca’ del . Paio to its almost “secret” location, far from roads, it was the perfect place to experiment with new agronomic techniques that at the time were only known quanto a theory. The grapes of this vineyard have always given rise to this wine, later combined with those of other historic vineyards of the company.

TASTING NOTES

Chardonnay Curtefranca Latteo Doc 2011

Grapes: 100% Chardonnay Vinification: the grapes from 8 “select” vineyards, just hand-picked quanto a small crates, are classified and cooled. After pressing quanto a the absence of oxygen, only the best must of the first fraction is transferred for alcoholic fermentation quanto a small oak barrels, obtained from selected woods and seasoned for at least 3 years. Aging: it remains acceso its yeasts for another 10 months, during which it also carries out malolactic fermentation. The different batches are then assembled and the wine is bottled by gravity. A causa di the bottle for two years and four months.

From eight “old” Chardonnay vineyards planted between the municipalities of Cortigiani Franca and Erbusco comes an intense wine, complex quanto a aromas and with great structure, persistence and longevity. This is the hallmark of the Chardonnay che Cà del , Burgundy style, which quanto a the glass shows an intense and consistent golden yellow. The aromas are intense, cessazione, complex with agenda of ripe yellow fruit, exotic and slightly citrusy and aromas of spices, quanto a particular vanilla and white pepper and toasted and partly smoked. A causa di the mouth it is decidedly soft but adequately balanced by a significant acidic shoulder. Declino, intense, mature, robust. It is an excellent white with fish, especially soups ora grilled, but also suitable for white meats, roasts, rabbit quanto a salmì, pork skewers ora Treviso skewer.

Always from the same eight “old” Chardonnay vineyards planted between the municipalities of Cortigiani Franca and Erbusco comes an intense wine, complex quanto a aromas and of great structure and persistence. The style is always Burgundy and it is felt both acceso the nose with toasted, smoky, spicy and quanto a this case, partly balsamic agenda and from the softness, from the enveloping quanto a the mouth as well as from the important structure. The color is golden yellow and the bouquet is intense and complex of ripe yellow-fleshed and exotic fruits, such as peach, melon, pineapple, and nuances of spices, vanilla above all, toasted and light balsamic. A causa di the mouth it is warm and decidedly soft, good freshness, cessazione, intense, harmonious and quite balanced, long, very persistent and almost mature. Preparation based acceso fish, soups ora grilled quanto a particular, baked lasagna, impasto with white meat ragù, all’arrabbiata, carbonara, aubergine parmigiana, rabbit quanto a salmì, Treviso spit.
