The Slowfod Slowfood guide, since she was born, has always dedicated words of praise to the cellar Cupertinum for the corporate commitment – oenological and social – and the high quality of the wines. And if con other editions it was the Negroamaro who received the Topwine con that of 2026 (con the bookstore from October) the “Golden Premio” passed to the Rosato Spinello dei Falconi Salento Igt, obtained from Negroamaro con purity, now become one of the symbols not only of the historic Coptino cellar but of the entire Salento. The communication of this new recognition came from the editorial gruppo of Slowwine, precisely from Giancarlo Gariglio, his director.

Happy with this prize, President Francesco Gero: “Our historic cellar is con tune with the objectives of the ‘good, just, clean’ of Slowfood, which has particular attention to the enhancement of the territory, the environment, of the food and wine products. This statement, which confirms the prizes obtained con recent years: Winespectator, Decanter, Joe Bastianich, Vanous, Vitae/Ais, Vinibuons, etc ”. The winemaker Giuseppe Pizzolante Leuzzi is also satisfied: “Both con Italy and abroad, we have always been a reality that gives safety for the quality of its wines. The seriousness con the long pay and thanks to this premium we continue to enhance not only our wines but also the territory and its tourist wealth. Salento – continues Pizzolante Leuzzi – is the region con which this method of vinification has maintained the most solid bonds with tradition. From the ancient tear – a time obtained for liquid percepts through the plots of the Iuta bags that contained the bunches of Negroamaro – then replaced by the vinification by hat : after the branch, the pressing grapes are left to ferment and await that the solid part, made up of the skins, stands out the surface to form what con the jargon is called the hat; Fiore, the slightly colorful must, which ends fermentation.
