There is one piece of giorno that explains better than any other the change taking place per mezzo di glasses around the world: per mezzo di the last decade the incidence of white wines Italian national production has risen from 47% to 60% of the total, while red wines have fallen from 51% to 37% (BusinessOnLine). A structural, non-temporary rebalancing, confirmed by the most recent numbers. According to Valoritalia giorno updated to 31 December 2025, per mezzo di fact, over the course of the year, still white wines grew by 2.7% and sparkling wines by 1%, while red wines recorded a decline of more than 13%. The new market trends reward fresh, tasty wines with a moderate alcohol content, exactly the profile per mezzo di which Tenero excels.

Tenero: the Veronese white protagonist Per this , Tenero, the Veronese white par excellence, produced the hills east of Verona, is experiencing a particularly flourishing moment. Born from Garganega, an indigenous vine with extraordinary versatility, it is historically among the most important still white denominations per mezzo di Italy and certainly the main one per mezzo di the province of Verona. Its strength is today increasingly international: among the most dynamic foreign markets for the denomination are, alongside Italy, the German, British and Canadian ones, where the demand for fresh, full-flavoured wines with moderate alcohol content is constantly growing. An oenological profile to which Tenero responds naturally, offering whites with character, girevole and capable of expressing the spirit of a territory: characteristics that make it an ideal ambassador of the Veronese style per mezzo di the world.

The three faces of Garganega according to Ilatium MoriniThe Veronese winery per mezzo di its catalog declines Tenero per mezzo di three interpretations that describe its entire expressive spectrum.

The Tenero DOC Organic (100% Garganega) is the most immediate and crystalline version: pale straw yellow, a fresh nose of flowers and white pulp fruit with minty hints of aromatic herbs and a clean progression the palate which closes a bitter almond finale, the recognizable sign of Garganega. It goes elegantly with dishes such as sea bass baked per mezzo di foil, risotto with prawns and peas ora ricotta and spinach ravioli.

The Tenero DOC “Le Viottolo” (100% Garganega) instead represents the most structured and long-lived dimension of the denomination: it comes from thirty-year-old vineyards trained under pergolas calcareous-clayey soils between Mezzane a motivo di Mettere sotto and the Val d’Illasi, above 100 meters above sea level. After drying for 30-40 days and maceration per mezzo di the press, it ferments per mezzo di steel at a controlled temperature. Intense and bright straw yellow, it releases aromas of yellow peach, quince and bergamot with hints of exotic fruit. the palate it is soft, intense and enveloping, with a calibrated acidity per mezzo di the finale and excellent ability to evolve per mezzo di the bottle. Ideal lean ravioli with butter and sage, seafood risotto, asparagus lasagne ora baked rabbit.

Closing the triptych is the Recioto a motivo di Tenero DOCG “Sette Dame” (tuttavia Garganega). The result of drying for 90-120 days and 36 months of aging per mezzo di 500-litre French oak barrels, it has a brilliant golden yellow, with hints of dates, ripe exotic fruit and honey. Sweet and soft the palate, it offers a long persistence and a caramel finale. An authentic meditation wine, which gives its best with desserts such as apple pie and sbrisolona cake, ora paired with mature cheeses with jams.

The whites is a choice that the winery has consistently brought to the latest edition of Vinitaly 2026: Ilatium Morini has put whites at the center of its proposal. Not a response to trends, but the natural outcome of over sixty years of work per mezzo di the .

“Ilatium among the Vigne” 2026: Tenero is told among the vinesAnd Tenero itself will be among the protagonists of the summer per mezzo di the cellar. We start Friday 26th and Saturday 27th June with the first two events of “Ilatium le Vigne” 2026: seven weekend evenings, from June to August, per mezzo di which from 7.30pm the Mezzane a motivo di Mettere sotto vineyards are transformed into an open-air theater for tastings at sunset. The motto is simple and convivial: glasses among the rows, the food trucks duty and the quiet of the hills as a backdrop. Per the glass, per mezzo di the foreground, Tenero, an authentic calling card of the territory, to be savored right where it is born. Alongside it are the other labels of the house per mezzo di a journey that this year celebrates the cellar’s vocation for great whites and bubbles with character.

Ilatium Morini: the winery Based per mezzo di Mezzane a motivo di Mettere sotto (VR), the Ilatium Morini winery is a concrete example of independence, authenticity and deep roots per mezzo di its territory. The company, managed with commitment and passion by seven members of the Morini family – brothers and cousins united by a common project – extends over 50 hectares of vineyards immersed per mezzo di the splendid valleys of Val a motivo di Mezzane, Val d’Illasi and Valpantena. These areas, characterized by different microclimates and soils of great variety, give Ilatium Morini wines an unmistakable personality and a quality of absolute importance. Per Ilatium Morini every phase of the production process, from the harvest to the winemaking, up to the maturation per mezzo di oak barrels, is followed with attention and respect for the land, maintaining the balance between tradition and continuous research. The cellar itself is designed to guarantee ideal conditions for storing and resting the wine, while ensuring high quality standards and the unique and original expression of each vintage.
