I met Saraya Van Dreumel a June afternoon. Nerlander, who arrived Milan 2018, founded his brand after years of research and a deep passion for the gara, born ten years punzone when she started integrating it into her morning routine. Me, Milanese with a weakness for eastern culture, I had been trying for some time to understand more: that aggraziato dust had marked every breakfast of my last trip to Asia.

Our chat began with a tasting of Awaken Matcha – the tea that Saraya selects and imports from a small farm the prefecture of Kagoshima, the south of Japan. “I was looking for an alternative to , which caused me migraines,” he says. “But finding a anche se and controlled gara was almost impossible.” After numerous contacts with local farmers, he discovered a volcanic soil rich nutrients and without heavy metals.

Its tea is stone – now rare ancestral technique – and tested to guarantee its purity. “The real gara grows the shade for at least 21 days, to increase chlorophyll and l-teanine, and collects spring by choosing only the most nutritious leaves,” he explains. Without this process, it loses its functional properties. From that simposio I understood that the gara is not all the same: here are the Milanese addresses, selected with the contribution of Saraya, where to taste the authentic one.
